Gingersnap Cookie Dough Protein Balls
Do you love a sweet treat but you have health goals? Me too!
If you asked me to pick a favorite cookie I’d have to go with either a molasses cookie or a gingersnap cookie. Honestly a combination of the two would be perfection in my book so when I was looking for recipes to create a healthy “cookie dough” treat the idea of that combo just wouldn’t leave me alone so I made my own.
They are clean and simple, no sugar added, quick and easy to make.
This has become my go to treat when I get the urge to splurge!
Recipe
1 c almond butter
1/4 c molasses
5 T almond flour
1/4 c vanilla protein powder (I use 1 scoop doTERRA vegan protein powder)
1/2 tsp ground cinnamon
1/2 tsp ginger (or 1-2 drops doTERRA ginger essential oil)
1/8 tsp salt
In a bowl, combine all the ingredients and using a melon scoop to portion each ball from the mix, roll into a ball with your hands and place on a plate or cookie sheet and freeze. I transfer into a freezer safe container once frozen and remove one ball at a time a few minutes before I plan to eat it.
Makes about 12 single servings. 176 calories each - 10.2g Carbs, 13g Fat, 7.1g Protein
